Get ready to celebrate St. Patrick's Day with our Cheese of the Month! From the land of County Tipperary in Southern Ireland comes the lovely pasteurized cow's milk Irish Castle Cheddar. The relatively flat green pastures, clear waters and mild climate of the region are ideal for dairy farming, and its high-quality native grasses produce the best milk and excellent cheddar. Aged over 12 months, Irish Castle Cheddar has a rich creamy texture and a deep, satisfyingly mild taste. This Irish cheddar is generally interchangeable with any regular cheddar. Pair Tipperary Irish Castle Cheddar with this month's featured beer - Willow Rock Galway Irish Style Red Cream Ale. Want to try before you buy?
