“Life is gouda, but it’s even cheddar with Funny Farm foods!”

Funny Farm Foods, formerly LaLoo’s Ice Cream, sells several kinds of goat milk products. All of their goat goodies are 100% goat-dairy based and are made with 100% Wisconsin goat’s milk from their co-op of family farms. The company’s mission is to make great tasting food that more people can love—and help them have more fun while eating it! All of their products are made with real simple ingredients, are free from synthetic dyes and have no “lemony” or “twangy” goat flavors.

Goat’s milk is predominantly A-2 (beta casein protein) milk which has less lactose and is generally easier to digest than most cow’s milk. Dairy goats tend to be easier on the environment than cows. Funny Farm Mozzarella is a pasteurized cheese made in traditional mozzarella style. It has a fresh mild taste with a slightly sweet finish.

Funny Farm Mozzarella would be an excellent addition to a charcuterie board as its mild, creamy texture pairs well with savory cured meats like prosciutto and salami. Feature it alongside tomatoes, basil, olive oil, balsamic glaze, and various crackers or breads. Placing the mozzarella in small bowls or ramekins helps contain moisture and keeps the board tidy. Consider adding fig jam or pesto for dipping.

Other suggestions for Funny Farm Mozzarella: Shred it on pizza, use it in your favorite lasagna, baked pasta or caprese salad recipes, add it to your favorite sandwich or burger, or cut and cover it in breadcrumbs and bake it for amazing cheese sticks.

Funny Farm Cheddar is a pasteurized goat milk cheddar cheese. Goat cheddar is naturally white because it contains no beta carotene. It is a firm cheese that is a bit more crumbly and lower in lactose than traditional cow’s milk cheddar. Funny Farm Cheddar pairs well with lighter, more aromatic foods such as honey, figs, nuts and dry white wines. Goat cheddar melts well but may have a slightly different texture than cow’s milk cheddar which makes it perfect for sauces.

Other suggestions for Funny Farm Cheddar: Serve it on a cheese board, use it in your favorite mac & cheese recipe (perhaps combining it with one or more other cheeses), or substitute it for traditional cheddar in twice-baked, mashed and scalloped potato recipes or in a frittata or quiche. Melt it on a burger or hot sandwich, top roasted broccoli, cauliflower or stuffed peppers with it, or try combining it with caramelized onions, fig jam, or sliced apples on sourdough bread for a delightful twist on a traditional grilled cheese sandwich.
