March Cheese of the Month is Tipperary Irish Castle Mild Cheddar and Lively Run Shire Beer Cheese.

From the land of County Tipperary in Southern Ireland comes the lovely pasteurized cow's milk Irish Castle Cheddar Cheese. The relatively flat green pastures, clear waters and mild climate of the region are ideal for dairy farming, and its high-quality native grasses produce the best milk and excellent cheddar. Aged over 12 months, Irish Castle Cheddar has a rich creamy texture and a deep, satisfyingly mild taste. This Irish cheddar is generally interchangeable with any regular cheddar.

Lively Run Shire is a 3-month aged cow's milk Gouda-style cheese from New York's Finger Lakes region, created in collaboration with Hopshire Brewing. In the process of making Shire the cheese curds are washed with Hopshire’s delicious Scottish Ale. The dark ale imbues the cheese with toasty flavors of malt and coffee. This earned the cheese a gold medal in the 2023 American Cheese Society. Pair this cheese with slightly sweet crackers for a delicious snack.
